Gluten-Free Zucchini Brownies

Incredibly moist, these brownies are so easy to make! All it takes is a bowl and a few ingredients to make these decadent gluten-free brownies.

Ingredients
  

  • 2 cups zucchini grated
  • 1 1/4 cups cane sugar
  • 1/2 cup avocado oil
  • 2 cups gluten-free all-purpose flour with xanthan gum
  • 1/4 cup baking cocoa
  • 2 tsp vanilla
  • 1 1/2 tsp baking soda
  • 1 tsp sea salt
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 350 degrees
  • In a large mixing bowl, combine zucchini, sugar, avocado oil, and vanilla extract.
  • In a medium mixing bowl, sift together the flour, cocoa, baking soda, sea salt, and cinnamon.
  • Mix the dry ingredients thoroughly with the wet ingredients.
  • Pour into greased baking dish.
  • Bake for 300 to 35 minutes or until a toothpick inserted into the middle comes out clean.
  • Remove from oven and completely cool.
  • Frost with Dark Chocolate Frosting, if desired.

Notes

  • Use High-Quality Cocoa Powder: For a richer chocolate flavor, use high-quality unsweetened cocoa powder. Dark chocolate makes these brownies even more decadent! 
  • Add Binder: If your gluten-free flour blend does not contain xanthan gum, sift in 1/8 teaspoon with the dry ingredients. 
  • Add In Extras: Feel free to add in your favorite mix-ins such as dried fruit, or different types of nuts for added texture and flavor.
  • Baking Time: When baking gluten-free, recipes generally take a bit longer to bake. Always test doneness by inserting a toothpick into the batter. If it comes out clean you know it's done. If not, bake it a few minutes longer and test again.
