Gluten-Free Zucchini Brownies

Incredibly moist, these brownies are so easy to make! All it takes is a bowl and a few ingredients to make these decadent gluten-free brownies.

- 2 cups zucchini grated
- 1 1/4 cups cane sugar
- 1/2 cup avocado oil
- 2 cups gluten-free all-purpose flour with xanthan gum
- 1/4 cup baking cocoa
- 2 tsp vanilla
- 1 1/2 tsp baking soda
- 1 tsp sea salt
- 1 tsp ground cinnamon
Preheat oven to 350 degrees
In a large mixing bowl, combine zucchini, sugar, avocado oil, and vanilla extract.
In a medium mixing bowl, sift together the flour, cocoa, baking soda, sea salt, and cinnamon.
Mix the dry ingredients thoroughly with the wet ingredients.
Pour into greased baking dish.
Bake for 300 to 35 minutes or until a toothpick inserted into the middle comes out clean.
Remove from oven and completely cool.
Frost with Dark Chocolate Frosting, if desired.
- Use High-Quality Cocoa Powder: For a richer chocolate flavor, use high-quality unsweetened cocoa powder. Dark chocolate makes these brownies even more decadent!
- Add Binder: If your gluten-free flour blend does not contain xanthan gum, sift in 1/8 teaspoon with the dry ingredients.
- Add In Extras: Feel free to add in your favorite mix-ins such as dried fruit, or different types of nuts for added texture and flavor.
- Baking Time: When baking gluten-free, recipes generally take a bit longer to bake. Always test doneness by inserting a toothpick into the batter. If it comes out clean you know it's done. If not, bake it a few minutes longer and test again.
