Homemade Meyer Lemon Curd

- 4 tablespoons unsalted butter
- 1/2 cup organic cane sugar
- 1/4 cup fresh Meyer lemon juice regular lemon juice works to but the flavor will be slightly more tart
- Zest of one Meyer lemon or a regular lemon
- 4 egg yolks
In a small saucepan over medium heat, melt the butter.
Remove from heat. Whisk in the sugar, lemon juice, and lemon zest.
Add egg yolks one at a time, whisking thoroughly after each addition.
Return the saucepan to medium-low heat, whisking constantly until the mixture thickens and coats the back of a spoon.
Remove from heat and strain the curd through a fine-mesh strainer into a glass bowl.
Press plastic wrap directly onto the surface of the curd to prevent a skin from forming. Let cool to room temperature, then store in the refrigerator.
