Homemade Meyer Lemon Curd

Ingredients
  

  • 4 tablespoons unsalted butter
  • 1/2 cup organic cane sugar
  • 1/4 cup fresh Meyer lemon juice regular lemon juice works to but the flavor will be slightly more tart
  • Zest of one Meyer lemon or a regular lemon
  • 4 egg yolks

Instructions
 

  • In a small saucepan over medium heat, melt the butter.
  • Remove from heat. Whisk in the sugar, lemon juice, and lemon zest.
  • Add egg yolks one at a time, whisking thoroughly after each addition.
  • Return the saucepan to medium-low heat, whisking constantly until the mixture thickens and coats the back of a spoon.
  • Remove from heat and strain the curd through a fine-mesh strainer into a glass bowl.
  • Press plastic wrap directly onto the surface of the curd to prevent a skin from forming. Let cool to room temperature, then store in the refrigerator.
