Here are a few of my go-to tricks for perfect gluten-free zucchini brownies every time:
Use high-quality cocoa powder.
A rich, unsweetened cocoa — especially dark chocolate — takes these brownies to the next level.
Add a binder if needed.
If your gluten-free flour blend doesn’t include xanthan gum, sift in about ⅛ teaspoon with the dry ingredients to help the brownies hold together.
Shred finely, not coarsely.
Zucchini should blend into the batter — no veggie chunks here!
Toss in some extras.

Gluten-Free Zucchini Brownies
Ingredients
- 2 cups zucchini grated
- 1 1/4 cups cane sugar
- 1/2 cup avocado oil
- 2 cups gluten-free all-purpose flour with xanthan gum
- 1/4 cup baking cocoa
- 2 tsp vanilla
- 1 1/2 tsp baking soda
- 1 tsp sea salt
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl, combine zucchini, sugar, avocado oil, and vanilla extract.
- In a medium mixing bowl, sift together the flour, cocoa, baking soda, sea salt, and cinnamon.
- Mix the dry ingredients thoroughly with the wet ingredients.
- Pour into greased baking dish.
- Bake for 300 to 35 minutes or until a toothpick inserted into the middle comes out clean.
- Remove from oven and completely cool.
- Frost with Dark Chocolate Frosting, if desired.
