How to Store Lemon Curd
Homemade lemon curd keeps beautifully. Store it in an airtight container in the refrigerator for up to one month or freeze it for longer storage. (I like to freeze mine in small jars so I can thaw just what I need.)


Homemade Meyer Lemon Curd
Ingredients
- 4 tablespoons unsalted butter
- 1/2 cup organic cane sugar
- 1/4 cup fresh Meyer lemon juice regular lemon juice works to but the flavor will be slightly more tart
- Zest of one Meyer lemon or a regular lemon
- 4 egg yolks
Instructions
- In a small saucepan over medium heat, melt the butter.
- Remove from heat. Whisk in the sugar, lemon juice, and lemon zest.
- Add egg yolks one at a time, whisking thoroughly after each addition.
- Return the saucepan to medium-low heat, whisking constantly until the mixture thickens and coats the back of a spoon.
- Remove from heat and strain the curd through a fine-mesh strainer into a glass bowl.
- Press plastic wrap directly onto the surface of the curd to prevent a skin from forming. Let cool to room temperature, then store in the refrigerator.
