Ingredients
  

  • ½ cup unsalted butter melted
  • 1 cup gluten-free graham cracker crumbs
  • 2 cups confectioners’ sugar
  • 1 cup + 2 tablespoons creamy peanut butter divided
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Line a 9-inch square baking pan with parchment paper. Set aside.
  • In a large bowl, combine the melted butter, gluten-free graham cracker crumbs, and confectioners’ sugar until combined. Stir in 1 cup peanut butter until smooth. Press evenly into the prepared baking pan.
  • In a double boiler, melt the chocolate chips and remaining 2 tablespoons peanut butter, stirring until smooth. Spread evenly over the peanut butter layer.
  • Refrigerate for 2 hours or until firm. Let sit at room temperature for about 15 minutes before cutting into squares.

Notes
